蛋白質吸收與消化(Protein absorption and digestion)



1.蛋白質會由先由蛋白酶(proteolytic enzyme)分解，小的會直接被分解成胺基酸，大的蛋白質則先被分解成寡胜肽(oligopeptides)
2.去除N端和C端的tripeptide或dipeptide才容易進入小腸
3.寡胜肽會先經由胺基胜肽酵素(aminopeptidase)將含氮端切除，再經由羧肽酶(carboxypeptidase)切除COO-端，剩下中間的部分再由內切胜肽酵素(endopeptidase)分解成胺基酸，最後送往血液
