
1.蛋白質會由先由蛋白酶(proteolytic enzyme)分解,小的會直接被分解成胺基酸,大的蛋白質則先被分解成寡胜肽(oligopeptides)
2.去除N端和C端的tripeptide或dipeptide才容易進入小腸
3.寡胜肽會先經由胺基胜肽酵素(aminopeptidase)將含氮端切除,再經由羧肽酶(carboxypeptidase)切除COO-端,剩下中間的部分再由內切胜肽酵素(endopeptidase)分解成胺基酸,最後送往血液
